The Controlled and Guaranteed Designation of Origin label, therefore, is not just a question of nomenclature or – even worse – marketing.
It’s a question of respect for nature, for the local agricultural and winemaking traditions, and, above all, for those who buy.
If Greco di Tufo Cantine di Marzo can boast the DOCG designation, it is because we fully comply with all the requirements imposed by the production regulations.
Cultivation and production always take place in Tufo, in the heart of the regulated area, and – although it is permitted to use “Coda di Volpe” grapes up to a maximum proportion of 15% – we use only 100% “Greco di Tufo” grapes.
We are deeply proud that Greco di Tufo, in addition to being the emblem of the wines of the province of Avellino, is also the flagship wine of Cantine di Marzo.
Even though we finished our studies a while ago, when we discuss Greco di Tufo DOCG Cantine di Marzo with someone we still hear this phrase repeated: “You could do so much more!”
We made a specific choice that we are proud of: to produce Greco di Tufo exclusively with grapes harvested from our vineyards located in San Paolo and Santa Lucia, two of the three hamlets surrounding the center of the municipality of Tufo.
We might even be going against the trend but, although for some producers it is a consolidated habit,
Here at Cantine di Marzo, we consider Mother Nature our irreplaceable partner, for Greco di Tufo DOCG and all the other wines we produce. Every day, we immerse ourselves in our vineyards to offer her all the support she needs to maximize the contribution she makes to our vines, both in terms of quantity and quality. The soil composition, altitude, winds, temperature variations, insects, plants, animals, and microorganisms—everything contributes to creating a delicate balance that influences the quality of the wine produced and allows the vines to better withstand the ravages of the surrounding environment.
Added to this is the contribution of our winemakers, who tend the vines and soil with a mastery born of centuries of agricultural tradition. Through manure fertilization, the practice of green manure, the use of sheep to clear the land, and gentle pruning, we avoid the use of chemical fertilizers and minimize mechanical interventions, in order to safeguard the biodiversity of our vineyards and the surrounding nature.
For this Greco di Tufo, as for all the other types of Greco produced by Cantine di Marzo, we use only the free-run must, which we leave to ferment at a controlled temperature in stainless steel tanks using selected yeasts.
Almeno 7 mesi di riposo sulle “fecce fini“ conferiscono al Greco di Tufo DOCG complessità e struttura e, prima di essere imbottigliato, viene leggermente filtrato e conservato a temperatura di cantina, finché non viene giudicato pronto. È solo da quel momento in poi, e fino ad esaurimento delle poche bottiglie prodotte, che il Greco di Tufo DOCG può finalmente raggiungere i vostri calici.”
Per l’etichetta del nostro Greco di Tufo DOCG, avremmo potuto scegliere un disegno del palazzo che ospita la nostra cantina dal 1648 o magari, invece, avremmo potuto optare per una scelta grafica decisamente più moderna.
