At first glance, the concept of “Grappa di Greco di Tufo” might seem to imply an insurmountable contradiction. Common sense would suggest that in Italy, grape marc distillation is the exclusive prerogative of the Veneto, Trentino, and, more generally, the entire Alpine region.
Of course, it’s undeniable that those places have companies and a level of knowledge capable of driving an entire segment, but it’s equally indisputable—though probably unknown to most—that grappa production is widespread throughout our country, even reaching top-notch quality levels in Sicily.
This distillate, after all, is a true hymn to recycling ante litteram, the fruit of that ancient peasant philosophy dictated by necessity, according to which even waste can produce value.
Among the many things we learned from our grandparents is that here in Tufo and throughout the province of Avelino, we are fortunate to be able to handle such a prized raw material. The grapes from which we make our Greco di Tufo DOCG and Riserva are a true treasure, even once pressed. Wasting them would be a crime.
We are not in Trentino or Veneto, but we assure you that the Grappa di Greco di Tufo produced from the pomace also destined for maceration is a first-rate distillate.
THE PRODUCTION METHOD
OF GRECO DI TUFO GRAPPA
To produce Grappa di Greco di Tufo Cantine di Marzo, we use fresh, single-varietal 100% Greco di Tufo pomace. A very short time passes between pressing the grapes and the start of distillation in a copper still, achieved through a so-called “discontinuous” process.
After distillation, the Grappa di Greco di Tufo ages in oak barrels for 7 months and then rests for another month in stainless steel barrels.
The result is a Grappa with a straw yellow color, fragrant on the nose, harmonious and well-structured on the palate, with a refined and sweet taste.
