With this wine, we have ventured beyond traditional boundaries to explore an uncharted dimension of Greco di Tufo. We chose a medium as old as civilization itself: clay.

While our Single Vineyard productions are already limited, Didymos is an ultra-small batch release. Every hand-numbered bottle originates from a single 600-liter clay amphora.
There is no margin for error and no room for haste. We embraced the challenge of working with clay amphora—a living, demanding material far more complex to manage than stainless steel—to facilitate natural micro-oxygenation. The result is a Greco di Tufo that strips away its classic profile to reveal an incredibly deep, balsamic soul. This is a high-stature white wine for those who seek boldness and texture.

Didymos represents the passing of the torch. While our Single Vineyard Crus are the estate’s foundation, this clay-amphora-macerated wine is our bridge to the future.
The use of a clay amphora is both technical and symbolic: a return to primitive origins to project Greco di Tufo into a new era. Each sip reflects the resilience of a grape variety that never ceases to surprise and a family’s drive to innovate while remaining rooted in its history.

The crafting of Didymos follows a rigorous, ancestral ritual. It begins in the amphora with the fermentation and the skin-contact maceration for approximately one month, allowing the must to extract color, tannins, and primary aromas.
The wine then ages for a full year in clay amphorae on its fine lees. Here, the porosity of the clay amplifies the tertiary aromas of the Greco di Tufo, developing the unique balsamic notes that define its character. After bottling, Didymos rests in the cool silence of our cellars for another two and a half years. Only after this extended aging is the wine ready to unveil its extraordinary complexity.
